Chia hemp nut corners
Made with Love & Hemp Protein
These ingredients you need for your nut corners
🥧 30g chia seeds
🥧 50g almond flour, de-oiled
🥧 50g wholemeal spelt flour
🥧 20g rolled oats
🥧 50g hemp protein powder
🥧 30g sugar
🥧 1 tsp baking soda or baking powder
🥧 100g low-fat quark
🥧 1 egg
🥧 130ml water
🥧 1 pinch of salt
For the topping:
🥧 50g butter
🥧 30g sugar
🥧 1 packet of vanilla sugar
🥧 6 tbsp water
🥧 200g almonds, coarsely ground
Optional intermediate layer
🥧 2 tablespoons of forest fruit jam
🥧 2 tbsp water
🥧 1 tbsp brandy or rum
How it works
- Mix the forest fruit jam in a glass with approx. 2 tbsp water and 1 tbsp brandy and set aside
- Mix the chia seeds, flours, baking powder, sugar, salt and protein powder until dry
- In a separate bowl, whisk the quark, egg and a pinch of salt well and then mix with the flour mixture to form a dough
- Leave the dough to rest for about half an hour
- Then spread this out on a baking tray lined with baking paper and spread roughly
- Cover with cling film and then roll out the dough
- Drizzle the dough with the previously mixed forest fruit jam and spread evenly to the edges
- Preheat the oven to 180 degrees (fan oven)
- Melt the butter in a pan, add the sugar, vanilla sugar and approx. 6 tablespoons of water and bring to the boil briefly
- Stir in the nuts (almonds)
- If the mixture is too firm, add 1 - 2 tablespoons of water and stir in well
- Now spread the nut mixture evenly over the dough and press down lightly
- Bake at 180 °C for about 25 - 30 minutes. Keep checking to make sure the pastry is not getting too dark
- Cut into triangles while still warm
- Allow to cool well before removing from the baking tray
- If you like, you can dip the corners in chocolate. Also tastes great with our dark and milk hemp chocolates

The berry intermediate layer loosens up the nut corners beautifully and gives them a great aroma.
